I love healthy, fresh food, but I also Love Carbs (who doesn’t 😉 )!  I like to try new things, and new breads, one I found I really like is pumpernickel bread. It seems to be an acquired taste for some though.  I usually eat it toasted with butter and love it that way. But I needed to find another way to get through an entire loaf before it went bad.

So of course I went to Pinterest for some ideas. I searched for pumpernickel bread with cucumber and found a few recipes of cucumber sandwiches.  But nothing that actually used pumpernickel bread. I remember trying some avocado toast from The Cheesecake Factory one time and Loved it! So, what else can you add to cucumber and avocado to make it delicious? Sprouts and dill weed!

So I came up with this yummy recipe consisting of pumpernickel bread, guacamole, alfalfa sprouts, cucumbers and dill.


I bought my pumpernickel bread from my local Kroger store, Smith’s. You can also buy pre-made guacamole, cucumber and fresh dill, or you can use dill from the spice section, which is what I choose to do. Unfortunately Smith’s doesn’t sell sprouts anymore, so I had to get them at my local Harmon’s.

I like to pop my bread in the toaster for a couple of minutes, the harder the bread the easier it is to hold up to the weight of the food on top.  I then spread a good amount of guacamole on top of the bread.  I buy my guacamole from Costco, and end up using a full packet for two pieces of bread.


Next, I grab some of the alfalfa sprouts, rinse them off, pat them dry with a paper towel and spread them out on top of the guacamole. You can find the Benefits of Alfalfa Sprouts Here.


I peeled and cut my cucumber up to decent sizes and placed them on top.


Then I sprinkler some dill on top and enjoy!


It is so yummy and fresh! And don’t forget healthy! 😉

Vegetarian and Dairy free! And for those following the 21 Day Fix Plan, I count it as 1 Yellow (when using two small slices of toast), 1 Blue, and 1 Green.

Cucumber, Guacamole Pumpernickel Toast with Alfalfa Sprouts

1 Cucumber, Peeled and sliced

2 Pieces Pumpernickel Bread, toast in toaster if desired

1 Packet Guacamole

Small handful Alfalfa Sprouts, rinsed and patted dry

Dill Weed


Toast bread if desired.  Spread guacamole on top of toast, layer with alfalfa sprouts then cucumbers.  Sprinkle a little dill weed on top of the cucumbers and enjoy!
